Cauliflower Rice

*Chef's Note: Because rice and other grains cause blood sugar spikes and other health concerns, I generally avoid them. But this dish helps to satisfy my psychological craving for rice while not putting my health in jeopardy. This is a very basic recipe that pairs well with other items, like lamb curry or terayaki vegetables (for which recipes are forthcoming...) 

what's in it:

2 small heads cauliflower
1/4 cup fresh parsley, chopped
2 Tbsp raw butter
Sea Salt


what to do about it:

Chop cauliflower for placement into a food processor. Transfer cauliflower to food processor and process until all of it is finely chopped. Remove from food processor. Stir parsley and cauliflower together. Place in small steamer-friendly dish or bowl and steam for 15-20 minutes. Remove from steamer and stir in raw butter. Add sea salt to taste. 

Makes about 4 cups (32 ounces).
